Chicken Tacos!

Mitch and I have been talking about making chicken tacos for months now and I never found a good recipe. My friend, Jenna posted a recipe for them on blog a few days ago, so I thought we would make them! 


They turned out delicious and are super easy. Mitch loved them.. he already wants to make them again!
Here is the recipe... hope you enjoy! 

2-3 large boneless skinless chicken breasts, chopped (I marinated mine with a grill mate citrus chipotle marinade)
4 tortillas, you can use any size... small works best, but we only had large and they turned out good!
1/2 c light sour cream or plain greek yogurt
1/2 c light or ff mayo
1 packet of taco seasoning
1 avocado
1 cup cole slaw (just the leaves not actually mixed)
2 laughing cow light queso wedges



1. Place chopped chicken in a skillet over medium high heat with 1 tbsp olive oil (or enough to coat the bottom of the pan). 





2. Cook 4-5 min or until cooked through and then add 1/2 taco seasoning packet, stir until coated.
3. While chicken is cooking, slice avocado and make sauce.

Sauce
Mix 1/2 c sour cream/greek yogurt with 1/2 c mayo, add other 1/2 taco seasoning packet and a squirt of lime juice if you have it.





4. Use one small wedge of the Laughing Cow Cheese





5. Place tortillas on another skillet to warm and melt the cheese.





6. Remove and then top with 1 scoop of chicken, 1-2 tbsp sauce, avocado slices and cole slaw leaf mix

Recipe Blog

Hello! I hope y'all find this blog useful and I hope you can share some of your best recipes with me. I love getting new recipes from friends and this way I can share them with everyone! So here's a little about why I started this blog:

Since college and especially since I have been married, I have developed a passion for cooking!
I love to cook anything and I love to try new things. I decided to create this blog because after I update our other blog, I always have new recipes to share and I don't ever have them with me, or feel like finding them. This way I can update as I have new recipes and it will also make it a lot easier to find recipes when I need them. I am always going back through each post to find recipes I have shared, and this way it will be kind of like a "online cookbook".  Also, being newly married, I am always looking for new things to try :)

I also want to know your favorite recipes! I always try other friends recipes, and now I can post them for others to try as well! And if you have some of your favorite recipes, send them my way!! I am going to try my best and take pictures as I cook, but I can't promise every post will have pictures.

So for my first recipe post I am going to keep it simple and post something that everyone loves.... CHOCOLATE CHIP COOKIES!
I know everyone has their own c.c. cookie recipe, and this is mine... well it is actually my friend, Shannon's. She makes them better than anyone I know, and when I make them they are good, but not quite like hers. So I thought I would share the recipe so you can enjoy them too...

Shannon's Chocolate Chip Cookies!


1 1/4 firmly packed light brown sugar
3/4 cup crisco- butter flavored
2 tablespoons milk
1 tablespoon vanilla
1 large egg
1 3/4 cup flour
1 teaspoon salt
3/4 teaspoon baking soda
3/4 cup semi-sweet chocolate chips
3/4 cup milk chocolate chips

* Heat the oven to 375 degrees. Combine brown sugar, shortening, milk and vanilla in a large bowl.


Beat at medium speed with an electric mixer until light and fluffy. Beat egg into mixture...


Next, combine flour, salt, and baking soda in a separate bowl...


And mix into cream mixture just until blended. Stir in chocolate chips!


Drop rounded tablespoons of dough 3 inches apart onto ungreased baking sheet


Bake 8-10 min. for chewy cookies, or 11-13 for crisp cookies. And here is the secret key...
While you are waiting for the cookies to get done, put the remainder of the dough in the freezer until you are ready to make the rest... I usually leave them in there for 10 min.


Cool cookies on baking sheet. I just got the cooling rack when we got married and I love it! It makes such a big difference in how the cookies turn out! Let them cool completely on the rack. 


And now for the best part....


ENJOY them with a cold glass of milk!
